Oh my goodness! If you haven't tried these delicious roasting peppers you're n missing out. These delicious sweet peppers purportedly came from seed brought directly from Italy by the Nardello family in 1887. These are so versatile from salads to pizza to tomato sauces, but they really show their character when grilled and blistered and served with Buratta or Manchego cheese and some hard toast. Ricotta works as well just as you might get in most upscale restaurants. Make your toast rounds ahead of time then put these peppers on the grill.

We like using the cast iron skillet and roast them until they begin to blacken. Add some salt and you have one of the best appetizers on the menu! For organic shishito peppers the market value is anywhere from $12 to $15 per pound (or more) so this is an excellent deal for the connoisseur.
