It's fresh and strong so be a frugal until you're familiar with the heat level. Use this with any dish...Italian, beef, pork, chicken, eggs, stir fry, and vegetable dishes of all kinds. I wouldn't use it on ice cream just saying!

Like their fresh counterpart, poblano peppers, these anchos are mildly spicy and great in Mexican cooking.

Dried in the solar drier, these peppers are dark red and crinkly. These grow as poblanos but become red as they mature making them sweeter. Traditionally used in the Caribbean and Mexico for enchilada sauce. They can be crushed to a powder and used as a rub for various meats. And you can't make a decent chili without them. Along with the anchos here's something I learned: crushed tortilla chips will thicken your chili and add that distinctive Mexican touch. Ya gotta try it!
