This dried herbal tea was created for our granddaughter as she began kindergarten. It helped her stay clam and balanced in her new environment. Ingredients: Hibiscus flowers, Tulsi, Rose petals, Red Clover blossoms, Lemon balm and Stevia leaf. Herbs are grown here on the farm or sourced from organic growers. Makes four quarts: use 1/2 cup tea for one quart boiling water. Put your tea in a quart mason jar and pour boiling water to fill, cover for 20 minutes to over night if desired for iced tea. Strain and enjoy!

Grown in our herb beds, harvested when the sun has warmed the volatile oils and quickly dehydrated at low temps to keep the bright green and aromatic Melissa officinalis perfect for your tea. Lemon balm is loved by bees as well as humans of all ages. We use it in our Happy Kid's Tea blend, along with holy basil. It is a nervine, helping keep body systems calm, from the mind to the digestive system.

Farm grown flowers and leaves grown, harvested and low temp dehydrated Trifolium pratense, commonly called Red clover. A beautiful tea for maintaining health. Blood building, alkalizing, moving lymph, assimilating nutrients and removing metabolic waste are some of it's attributes. We are usually challenged by the rabbits in harvesting these beautiful flowers, but I'm very excited about a new deer and rodent fence system that should be very helpful this season for not sharing so much!

We enjoy 7 acres here with many hardwoods and pines, mostly white pines. They are typically 80-100 feet tall, so reaching any needles is out of the question....until a storm comes through and one gives up it's roots and lands hopefully in a safe place. So this is how we came to harvest lots of pine needles. I have made a useful cough syrup with them already this year, but now I offer them to you for making the same, or perhaps some White Pine Needle Soda! Here's a recipe: 1 quart size mason jar 2 cups white pine needles 2 1/2 cups cold water 2-4 Tablespoons sugar Directions: You can rinse the needles gently in cold water. Then put them in the jar. Mix the water with the sugar, or you can use maple syrup or honey, but real sugar works best! Pour mixture into the jar, lid on, not in the dark, and let sit 2-3 days, watching for bubbles to begin. You can pour into small bottles, and try over ice or add to sparkling water, just have fun experimenting with it!
