Like their fresh counterpart, poblano peppers, these anchos are mildly spicy and great in Mexican cooking.

Dried in the solar drier, these peppers are dark red and crinkly. These grow as poblanos but become red as they mature making them sweeter. Traditionally used in the Caribbean and Mexico for enchilada sauce. They can be crushed to a powder and used as a rub for various meats. And you can't make a decent chili without them. Along with the anchos here's something I learned: crushed tortilla chips will thicken your chili and add that distinctive Mexican touch. Ya gotta try it!

AKA 'cowhorns' these peppers are great in chili, pasta, soups and salsas. These dry beautifully just by hanging in your kitchen which is essentially what constitutes dried red peppers from your grocery store. Approximately 7 peppers per 1/4 lb.

Oh my goodness! If you haven't tried these delicious roasting peppers you're n missing out. These delicious sweet peppers purportedly came from seed brought directly from Italy by the Nardello family in 1887. These are so versatile from salads to pizza to tomato sauces, but they really show their character when grilled and blistered and served with Buratta or Manchego cheese and some hard toast. Ricotta works as well just as you might get in most upscale restaurants. Make your toast rounds ahead of time then put these peppers on the grill.

Mojo peppers have a tropical flavor with a hint of heat. I was looking for a nice pepper to make chile powder and couldn't resist this description: "Exceptional, well-balanced flavor—sweet, fruity, citrusy, and spicy. Crisp, crunchy texture characteristic of an aji pepper. Fruits avg. 4–6" long and are excellent for fresh eating and sauces, but will also dry into slightly hot, fragrant chile powder." This one is the favorite of chefs. Although they are touted as a Japanese sweet pepper they vary from sweet to mildly spicy. Use for tempura, fry them, roast them. We like using the cast iron skillet and roast them until they begin to blacken. Add some salt and you have one of the best appetizers on the menu! For organic shishito peppers the market value is anywhere from $12 to $15 per pound (or more) so this is an excellent deal for the connoisseur.
