Like their fresh counterpart, poblano peppers, these anchos are mildly spicy and great in Mexican cooking.

Dried in the solar drier, these peppers are dark red and crinkly. These grow as poblanos but become red as they mature making them sweeter. Traditionally used in the Caribbean and Mexico for enchilada sauce. They can be crushed to a powder and used as a rub for various meats. And you can't make a decent chili without them. Along with the anchos here's something I learned: crushed tortilla chips will thicken your chili and add that distinctive Mexican touch. Ya gotta try it!

Feel a cold coming on? This elixir can help shorten the duration with elderberries, ginger, calendula, rose hips, orange peel and mullein (lung tonic). Brandy is the base for extraction and honey is added, both which are calming and soothing to irritated tissues of the respiratory system. Since this contains honey, it is not for use in children under the age of one year old. For adults, we use 1-2 dropper full up to 3 times a day at the onset of cold or flu. Some of the ingredients like calendula, elderberry, ginger and mullein are grown on our farm. We enjoy making small batch remedies in our certified kitchen on the farm.

I never realized how many inch worms live in the flowers of the tropical Albizia, or more well known as Mimosa, flowers. Collected and (worms removed to a more appropriate place) infused in organic cane alcohol, shaken often and decanted after 8 weeks, it is now ready for your herbal collection. Known as the Happy Herb, you can imagine that this would be a handy extract to have on hand. It’s been helpful in cases of panic, insomnia, times of distress and may be helpful to PTSD conditions. Contact your physician, especially if pregnant, as I am a grower and maker, and haven’t been to medical school! But I hear it’s generally considered to be safe.

I call it Lung Aid! Mullein in a native plant traditionally used (leaf) as a lung tonic. Elecampane is a biennial plant in the aster family; the root is useful as an expectorant, anti-tussive and antimicrobial. Together they team up as a great go to during cold and flu season. Both are grown on our farm, the mullein gets to choose where it grows. Organic cane alcohol is used for extraction.

Our Rye flour is made from certified organic rye berries and ground finely. We use it in breads, for sour dough starters, to make muffins and we mix it with our corn meal to make blueberry pancakes.
