This herb in the mint family has none of the mint taste. Use it in a salad, a smoothie, in soups, or as a garnish for anything. It's high in iron and vitamin C. As an herbal tea it is an anti-inflammatory and can reduce asthma symptoms (it works for me!). This herb also has anti-bacterial and antiseptic properties. Being allergic to insect bites, on the farm I chew the leaves and and apply it to the sting to stop swelling and itching. It can be used as a salve as well. Hang some to dry and you will have a versatile herb for your kitchen and your medicine cabinet,

Crunchy, juicy, and sweet raw treat. Just white chokes, no red. Jerusalem artichokes are good substitutes for potatos and carrots. Their carbohydrates are mostly inulin, making them good for low starch diets. Don't peel them. Slice them raw in salad, roast with meat or other vegetables, or make a creamy soup.

Between 1.5 and 2 ounces of a delicious mix of broccoli, purple radishes, collard greens, turnips, and kohlrabi microgreens. Delicious, and contain a highly concentrated amount of nutrition. I add them to just about everything I eat! These keep for at least a week in the fridge. They have been rinsed twice, but feel free to rinse them before you use them if desired!
