Hi! My name is Michele Colbert. I have been selling my gluten-free baked goods at the Gainesville Farmers Market, the Flowery Branch Farmers Market, and the Destination Market in Big Canoe. I started my business about a year and a half ago after retiring from 22 years of teaching in the Gainesville City School System. I have had a passion for baking for over fifty years; and when I found out I was gluten intolerant about eight years ago, I started experimenting with baking without gluten. I can now proudly say that I have many customers, who are not on a GF diet, who love my baked goods because they taste just as good, if not better, than many wheat-based products. When possible, I use local fruits and vegetables. I have also been gradually switching over to as many organic ingredients as possible. I am now using NGLG eggs for all my egg-based goods, and Dances with Bees honey for my paleo bars. So far, I have been able to switch the following other ingredients to organic: GF brown rice flour, GF oats, tapioca starch, black beans, cocoa, sugar, coconut flour, milk powder, carrots, and palm fruit shortening. The list keeps growing. I may change or add baked goods in the market section occasionally. I bake in a commercial kitchen space (Permit #069-FS-2016-05825) at 528 Bradford St. SW that I rent from Albert Lunalover, owner of Avocados Restaurant and Sabor Catering. I use separate baking equipment from Albert to avoid cross-contamination. I have my ServSafe Certification (#13080005) as well.
